spinach and cheese pies
ingredients
- 1 tbsp olive oil
- 1/2 medium onion, finely chopped
- 1 garlic clove, minced
- 200 g ricotta cheese
- 110 g of mozzarella
- 60 g cream cheese
- 100 g of parmesan
- tsp salt
- italian herbs
- 1/4 tsp black pepper
- 140 g spinach
- 2 sheets of puff pastry
- milk
method
- in a small saucepan, add olive oil, saut&eaucte; onions for 3 minutes. add garlic and saut&eaucte; for another
minute. add spinach to wilt.
- mix everything that isn't the puff pastry or milk together
- preheat oven to 175 C
- roll out puff pastry and cut little circles using a cup or something similar
- brush each circle with milk and put cheese mix on half of the circles and put the other circles on top
- bake for 15-20 minutes
