jon lee's big stew
ingredients
- 1 chopped onion
- 1 red pepper
- 2 garlic clove, crushed
- 3 tbsp red chilli, sundried tomato pesto, or vegan alternative
- 400 g can of mixed beans, drained, and rinsed
- 400 g can of chopped tomatoes
- 1 largish charrot
- some peas
- (optional) some brocolli
method
- fry up onion & pepper, along with pinch of salt, until softened
- add the garlic & pesto (max lee, brother of jon lee, says add as much as possible), and cook for 1 min
- add everything else, along with half a can of water, bring to a simmer, and cook uncovered for 10 mins
